1 lb beef sirloin steak, cut into strips
1 can coconut milk
1 T green curry paste
2 T fish sauce
1 T sugar (optional)
1 onion, quartered
1 c frozen peas
2 medium tomatoes, quartered
1 cup loosely packed fresh basil leaves
In dutch oven or wok, brown steak. Remove and set aside. In same pan, add coconut milk and heat over high heat. Stir in green curry, fish sauce, sugar and onion. Cook 2-3 minutes, stirring occasionally. Add peas and tomatoes, bring to a boil, then simmer until onions are transluscent. Add beef and heat through, about 3 minutes. Stir in basil until wilted, then serve with Jasmin rice or steamed veggies.
