Banana Bread

I let most of our bananas go over-ripe just so I can make banana bread. It is delicious and the kids love it for breakfast.
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon kale powder (optional, for added nutrition)
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 5 or 6 over-ripe bananas
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon

Preheat oven to 350 and grease a 9x5 bread pan.

In one bowl, sift together flour, baking soda, salt, and kale powder. In another bowl, cream softened butter and brown sugar.  Add eggs, bananas, vanilla, and cinnamon to the butter/sugar bowl and mix together. Add the flour mixture to the wet ingredients and using a wooden spoon, blending until just combined. If you over-mix it, you'll have dry banana bread - yuck! 

Bake for 60 minutes (I check it after 50 just to see if it's done - sometimes my convection oven cooks it faster than I'm expecting). Pull out, turn onto a rack and let cool.

Serve with lots and LOTS of butter :)
