Crockpot Cranberry Beef

2-3 lb beef or pork roast or stew chunks
2 sweet potatoes, peeled and cubed
1 Tbsp dried onion flakes (or 1 medium yellow onion, diced)
2 Tbsp soy sauce
1 16 oz can whole berry cranberry sauce (or 2 cups homemade cranberry sauce)
1 cup chicken or vegetable stock

Place sweet potatoes in the bottom of the crockpot, with meat on top. In a bowl, combine the the onion, soy sauce, cranberry sauce, and stock over the top of the meat. If the stock doesn't cover the potatoes, add water to fill in. Cover and cook on low for 6 hours or high for 4 hours. If you cook it on high, you may need to cut the meat apart about an hour before it's finished, just to help it soften up and soak up more sauce.
